
Buckwheat Superfood Granola Recipe
I met Ksenia of Breakfast Criminals on a beautiful and breezy spring morning in Washington
Square Park. She presented me with my very own Heart Bowl and made us breakfast to enjoy
in the sunshine—a matcha chia pudding with cashews, which she sprinkled with a buckwheat granola on top. It was crunchy and delicious, but didn’t feel too heavy or overly sweet like most granolas. She bought her box at Whole Foods, but it’s easier and cheaper to make at home.
After gathering a few ingredients from the bulk section at Whole Foods and using various superfoods already in my pantry, I threw this recipe together and am happy to have a yummy breakfast ready for the next couple of weeks.
Gather This:
- 2 cups buckwheat groats
- 1 cup shredded coconut
- 1/2 cup sunflower seeds (or any nut or seed combination of your choosing)
- 1/4 cup chia seeds
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 cup goji berries
- 1/4 cup cacao nibs
- 1-2 tablespoons Green Dream Superfood + Protein Blend
- 1-2 tablespoons Berry Bliss Superfood + Protein Blend
- 1/4 cup coconut oil
- 1/4 cup Berry Bee Manuka Honey (or sweetener of choice)
Do This:
Pre-heat oven to 325 degrees.
Stir dry ingredients together. Melt coconut oil and honey together. Combine and mix thoroughly. Line a baking sheet with parchment paper, and spread granola mixture evenly onto the pan. Bake 20 minutes. Stir to turn granola over, and bake another 10 mins. Remove from oven to cool.
This granola can be enjoyed simply with your favorite (dairy/dairy-free) milk or yogurt and also works wonderfully as a topping on smoothies, desserts, or toast!
